Pepper is the hollow fruit of an herbaceous plant which has the same name. It belongs to the family of the Solanaceae, in particular to the variety Capsicum. Between other species of its same family, there are commmon products such as the tomato and the aubergin.

In OLÉ! we produce and export the peppers, in total 1.300 tones per year and 15 hectares for its growing.

Red peppers are a great source of lycopene, vitamins A and C, which makes them one of the most important detoxicant products.

How to peel it?

The best way is to put them in the fridge, in a plastic bag with holes, this way they can last up to 15 days, maintening all their properties.

PEPPERS FILLED WITH RICE:

 

2. Peel and dice the tomatoes. Peel and grate the onion and fry it in a pan. When it starts getting brown, add the loin. After some stirring, add the tomatoes and a pinch of salt, a pinch of oregan and the teaspoon of sugar. Fry over a low heat for some fifteen minutes.

3. Add the rice and stir until the rice starts being a bit cooked.

4. Fill the peppers using all the mix and close them with the “lid” which we cut off in the first step. Cover all the peppers with aluminium paper and cook in the oven for an hour, which must have been previously heated at some 200º.

5. After this time, uncover one of the peppers to check if it is cooked.

 

Presentation and tasting:

Serve hot in a dish.

 

Ingredients for 4 people:
- 4 big red peppers.
- 250gr. of pork loin and chopped ham.
- 250gr. of ripe tomatoes.
- 1 medium onion.
- 200gr. rice.
- 1dl. oil.
- 1 teaspoon of sugar.
- 1 a pinch of oregan.
- Pine kernels.
- Salt

Preparation:

1. Wash the peppers and cut around the stalk as if it was a lid. Remove the seeds and put them in the ovenproof dish on aluminium paper.
